Baking Granny's Hard Jelly Cake with Becky Morris


A bit of history ... At the Morris Reunion in August (see below) Becky was passing around a cake she had made.  I took a piece, thinking nothing of it.  No sooner did I put the cake in my mouth, was I flooded with childhood memories of being at Granny's home eating this same cake during the holidays.  I did not even know I had such memories, but the cake brought everything to light.  With that, Beck and I made an agreement that whenever she was passing through Rexburg, she would teach me how to bake Granny's Hard Jelly Cake.  Well ... she was passing through and arrived at my home late Sunday night 9/2/12.  We started on the cake at 9:30 pm and finished two cakes by 1 am.  Thanks Becky for passing on such an important part of the Morris family history.
 
The Princess helping bake the CAKE!  It is some kind of process to get the cake baked.  Layer upon layer of cake with jelly in between each layer.
 
 
 
 
 
 
The Cake itself.  It does not look like much in the current state that you see, but after a sprinkle of powdered sugar, a nice tight wrap of wax paper and then foil and a good long sit in the freezer ... the longer the better, it is a gem like no other thing you have ever eaten.

While we waited for each layer of cake to bake, Becky, Fabio (her friend from Brazil), and the two wildmen spent the time playing cards and having a good old Jelly of a time!

I love this story and what a great memory to have come flooding back to you! I'm also jealous that you have gotten to know Becky. I am FB friends with her and can tell she's an awesome person. Hopefully I'll have the opportunity to get to know her better. I missed the Morris reunion mostly because I forgot and it ended up not being a good weekend for us to go. Hopefully next year we will be more settled and organized and we will be able to attend. I remember granny's jelly cake and would love the recipe....even better a lesson on how to make it. Does Becky ever come through Cedaredge Colorado!?!! Haha love ya and missed you at uncle bobs funeral, it was really good! Aunt Maryann read your memory....it was very fitting! 😊

What a tribute to your Granny! I know she would be so happy that her tradition is carried on and that her Gr. Grandchildren can get a glimpse of her patience and hard work. She loved Christmas and would spend days making her favorite treats for the big day. Missed you at the funeral!

Fun!!!! We made Hard Jelly Cake two years ago at Thanksgiving and had a great time trying to figure out the whole process. The flood of memories that are associated with different foods is crazy. I'm glad you are making new traditions and carrying on with the old ones.
